In den Ausstellungsprojekten mit den historischen Themen "Luxus und Dekadenz" und "2000 Jahre Varus" setzte sich Elisabeth Apelt mit der Architektur aus der Römerzeit künstlerisch auseinander. Ihre modernen Stillleben wurden in offiziellen Begleitausstellungen der Stadt Haltern am See 2007 und 2009 im alten Rathaus präsentiert.
